I came across a version of this fideo pasta recipe and loved how simple and easy it looked, and not to mention delicious. I tried it with a few changes of my own and now this fideo con carne recipe is one of my family's most requested recipes of mine.

▪️So simple and easy. This is one of those meals I like to make on a night I need a dinner that won't take a lot of effort, but is still comforting, filling and tasty!

You’ll need the following ingredients to make the best fideo recipe (in my family's opinion!)

📝 Ingredient Notes
- fideo pasta - Barilla makes this, or I find it in a package labeled vermicelli. Fideo noodles are basically short cut thin spaghetti noodles.
- chicken bouillon powder - I know this sounds weird in a beef recipe, but I like the flavor it adds to this recipe. Trust me.
- lean ground beef (93%/7%) - I prefer to use the lean ground beef since there is no need to drain after cooking.
📋 How to Make Fideo with Ground Beef Step-By-Step

Brown the ground beef over medium heat in a large, deep skillet. This HexClad 4.5 qt Deep Saute Pan has been one of the best purchases in kitchen equipment I have made. I'm a huge fan of all of these pans. I also love this meat chopper for cooking any kind of ground meat. It easily breaks up the meat into even pieces.
If you used a meat with a higher fat content, drain the fat from the pan.
After the meat is browned, add in the chopped onion and fideo. Stir frequently. You want the onions to become soft, and the fideo pasta to get a nice brown color on it. If it seems a little dry add a tablespoon of oil.



Add the tomato sauce, potatoes, tomatoes, hot water and the chicken bouillon. Stir until combined. Add salt and black pepper to taste.
Cover with a lid and cook for 15-20 minutes, stirring often, until pasta is cooked and potatoes is soft. Top with chopped fresh cilantro.



💡 Recipe Tips
Use frozen cubed hash brown potatoes to save time instead of chopping fresh potatoes.
Make sure to cut the potatoes into very small cubes. You don't want the pasta to be done and the potatoes still hard. If you have to keep cooking to get the potatoes soft, the pasta will become mushy.
Make Ahead Tips
Cook the ground beef in advance. Saute the onion and fideo with the ground beef. Cut up the potato and tomatoes. If this prep work is done in advance, you can dump everything in the pan when it is time to cook and have minimal work to do except stir and eat!

🫙 Storage & Reheating
Storage: Store this in an airtight container in the fridge for up to 3-5 days.
Reheating: Add a little bit of water and reheat in the microwave for 3 minutes.
Freezing: Freeze cooked meal in an airtight container for up to 1-2 months. Thaw before reheating.

Additions:
- fresh garlic cloves added while cooking the ground beef ingredients
- green bell pepper or red bell pepper
- a sprinkle of chili powder or garlic powder
- sprinkle queso fresco cheese over the top when serving
- top with a dollop of sour cream and a squeeze of lime juice
Substitutions:
- white onion or red onion instead of yellow onion
- chicken broth, tomato base or tomato broth instead of the chicken bouillon and water
- angel hair pasta or any other thin noodles broken into small pieces if you're unable to find fideo pasta

Fideo with Ground Beef and Potatoes
Ingredients
- 1 pound ground beef 93%/7%
- ½ cup yellow onion chopped
- 8 ounces fideo pasta
- 1 cup tomato sauce
- 2 cups yellow gold potato chopped small, about two
- 2 roma tomatoes chopped
- 4 cups hot water
- 3 tablespoons chicken bouillon
- salt to taste
- black pepper to taste
Instructions
- Cook ground beef over medium heat in a large skillet or pot until browned. (If you use a fattier beef, you’ll need to drain some of the fat here.) Add onion and fideo. Cook until fideo is golden brown. (If it seems a little dry, add a little bit of olive oil.)
- Add tomato sauce, potato, tomatoes, water and chicken boullion. Add salt and pepper to taste. Cover and cook for 15-20 minutes, stirring often, until pasta is cooked and potatoes are soft.
Notes
