Ingredients

  • 1 pound ground beef 93%/7%
  • ½ cup yellow onion chopped
  • 8 ounces fideo pasta
  • 1 cup tomato sauce
  • 2 cups yellow gold potato chopped small, about two
  • 2 roma tomatoes chopped
  • 4 cups hot water
  • 3 tablespoons chicken bouillon
  • salt to taste
  • black pepper to taste

Instructions

  • Cook ground beef over medium heat in a large skillet or pot until browned. (If you use a fattier beef, you’ll need to drain some of the fat here.) Add onion and fideo. Cook until fideo is golden brown. (If it seems a little dry, add a little bit of olive oil.)
  • Add tomato sauce, potato, tomatoes, water and chicken boullion. Add salt and pepper to taste. Cover and cook for 15-20 minutes, stirring often, until pasta is cooked and potatoes are soft.

Notes

Use frozen cubed hash brown potatoes to save time instead of chopping fresh potatoes.
Make sure to cut the potatoes into very small cubes. You don't want the pasta to be done and the potatoes still hard. If you have to keep cooking to get the potatoes soft, the pasta will become mushy.
Make Ahead Tips
Cook the ground beef in advance. Saute the onion and fideo with the ground beef. Cut up the potato and tomatoes. If this prep work is done in advance, you can dump everything in the pan when it is time to cook and have minimal work to do except stir and eat!
