A make-ahead, fresh fruit salad that is ready to go for meal prep, breakfast, lunch or dinner, and will last in your fridge all week.
During the weekend, I try my best to get things done ahead of time for the next week. My ultimate goal is less stress and chaos for everyone in my family. I probably succeed about 30%-40% of the time I would say. BUT, I feel I can only improve those numbers, so I'm taking baby steps.
This past weekend I made one of my good ole standbys. A big bowl of fruit salad that will last us all week.
When I make this giant bowl of fruit salad, everyone in the fam seems to eat more fruit. I'm sure it's partly because it looks so tasty, but also partly because everyone is so lazy! Peeling, cleaning and cutting fruit?? They will pass and grab something easier, unless this is in the fridge.
It's yummy to eat all alone, but I like to eat it with plain Greek yogurt and granola, or with a bowl of cereal. I also throw it in my meal prep containers as an easy side dish. It's also something that can be put out at dinner time as a quick and simple side dish.
Tips for making Meal Prep Fruit Salad
You can use any fruit, and in any combination. I would shoot for a variety of 5-6 different fruits, and with varying colors so you can get in a wide range of vitamins and minerals. The only fruit I would wait to add until serving would be banana. It can get brown and mushy and turn everything in to a gross mess.
You can have a general idea of what fruit you want to use, but be flexible since some fruits at the grocery store may not be available or look their best. Try to buy what is in season to get the best flavor.
Also, try to throw in one new fruit you haven't tried before to experiment a little. Try dragonfruit, persimmon, passionfruit, guava, or pomegranate.

Meal Prep Fruit Salad
Ingredients
- 1 lemon juiced
- 1 tablespoon honey
- 1 peach
- 1 cup raspberries
- 1 cup blueberries
- 1 kiwi
- 2 mandarin oranges
- 1 cup strawberries
- 1 small Granny Smith apple
- 1 carambola
Instructions
- Mix honey with juice of 1 lemon.
- Clean and cut all fruit into bite-sized pieces. Place in bowl and toss gently with lemon juice mixture.

Wow, you sure are creative when it comes to food. I'm not too much on experimenting with new foods. I usually stick with the standard fruits but who knows, you may have inspired me.
