cauliflower
riced

butter

cooked bacon
diced

cups
sharp cheddar cheese
shredded and divided

cup
sour cream

cup
green onions
chopped

teaspoon
sea salt

teaspoon
black pepper
Instructions
Preheat oven to 375° F.
Cook cauliflower rice in microwave for 4 minutes.
Let cool enough to handle. Squeeze water out of cauliflower rice with a thin towel.
Add dry cauliflower rice to a mixing bowl. Add butter. Mix with a hand blender until smooth.
Add remaining ingredients, except ½ cup of the cheddar cheese, and mix well.
Add mixture to a baking dish. Top with remaining ½ cup of cheddar cheese.
Bake for 20 minutes, or until heated through.
Notes
After baking, cauliflower can be topped with additional cooked bacon, green onions or sour cream for garnish.
