Spicy Avocado Toast

Spicy Avocado Toast is a quick, easy and healthy breakfast that's my go-to when I need something to keep me full and satisfied for a few hours. It's loaded with lots of protein, healthy fats and whole grains. Once you try this you'll become addicted. You've been warned!

Ingredients

  • 2 slices whole grain bread
  • ½ avocado
  • 1 tablespoon Valentina hot sauce
  • ¼ cup grape tomatoes halved
  • ½ cup arugula
  • 1 teaspoon extra virgin olive oil
  • ½ teaspoon lemon juice
  • dash of salt and pepper
  • 2 eggs
  • for sprinkling over the top: hemp hearts; black sesame seeds; more hot sauce

Instructions

  • Toast the bread.
  • Mash the avocado and mix with the Valentina hot sauce and salt and pepper to taste. Spread evenly over toast. Top with grape tomatoes.
  • Toss the arugula with the olive oil, lemon juice and salt and pepper to taste. Place on top of the toast.
  • Poach the eggs and place on top of the toast.
  • Sprinkle with hemp hearts, sesame seeds and lots of hot sauce
