Turkey Sandwich with Cranberry and Cheese

This Turkey Sandwich with Cranberry is so delicious and super easy to throw together. Plus, it's a great way to use up those next day Thanksgiving leftovers!

Ingredients

  • 3 ounces turkey
  • 1 ounce Swiss cheese
  • 1 pita bread
  • 1 tablespoon mayonnaise
  • 2 tablespoons cranberry sauce
  • 1 slice tomato
  • ¼ cup baby spinach

Instructions

  • Slice off the top ⅛" of the pita bread. Open the pita to form a pocket.
  • Warm the pita bread in the microwave for about 15-20 seconds.
  • Spread the mayo on the inside of the pita bread.
  • Place the Swiss cheese on top of the turkey and warm together in the microwave for about 45 seconds, until the cheese is melted and the turkey is warm.
  • Fold the warmed turkey and cheese in half, and stuff inside the pita bread. Be careful to not rip open the bread.
  • Spread the cranberry sauce on top of the turkey.
  • Stuff in the tomato slice and the baby spinach.
  • Serve with extra cranberry sauce if desired.

Notes

Substitutions or Variations:
    • Instead of turkey, you can use deli chicken breast or even rotisserie chicken.
    • Instead of Swiss cheese, I would go for another mild cheese like monterey jack or a creamy havarti cheese.
    • If you want to swap out the pita bread, you can try a soft multi grain bread, artisan white bread or even an onion roll.
    • If you don't like mayo, try cream cheese or even dijon mustard. Dijon mustard goes great with tart cranberries.
    • If you're feeling extra creative, throw some leftover stuffing in! That is sure to be one tasty sandwich!
What type of cranberry sauce is best for this sandwich?
Honestly, whatever is best is what tastes best to you. I prefer the jellied, canned cranberry sauce, but I know a lot of people prefer homemade cranberry sauce. Just use what you have leftover from turkey day!
What condiments go best on a turkey sandwich?
My favorites are simple just like this sandwich - mayo and cranberry sauce. You could even try a cranberry mayo recipe if you want to take it up a notch. Other ideas that would work well are dijon mustard, honey mustard, cream cheese, or a splash of balsamic vinegar.
Can I make these turkey sandwiches ahead of time?
I would say no. These are meant to have warm turkey, melted cheese and warm pita bread. The sauces and veggies are cold, so making them ahead would most likely leave the bread soggy and meat and cheeses cold.
