- 12 ounces smoked sausage
- 1½ pounds baby potatoes
- 1 crown broccoli
- 2 teaspoons garlic minced
- 2 tablespoons avocado oil or extra virgin olive oil
- 1 tablespoon dark brown sugar
- 1 tablespoon dried parsley
- 1 teaspoon dried rosemary
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
Preheat oven to 425°F. Spray sheet pan with cooking spray.
Wash and dry all produce.
Cut smoked sausage and veggies into bite-sized pieces, then place on the sheet pan.
Drizzle avocado oil over the meat and veggies. Sprinkle all spices and salt and pepper over meat and veggies. Toss everything until thoroughly coated.
Roast in the oven for 40 minutes, tossing once halfway through.
Kielbasa or turkey smoked sausage can be substituted for the smoked sausage.
Avocado oil is not necessary, but I like to use it as it has a higher smoke point than olive oil, meaning you can heat it up to higher temperatures without it smoking. If you don't have the avocado oil, you can substitute extra virgin olive oil.
